Ingredients

1 1/2 c. firmly packed fresh mint leaves and stems
2 1/4 c. water
2 Tbsp. fresh lemon juice
green food coloring
3 1/2 c. sugar
1/2 bottle liquid pectin
Preparation

Wash mint leaves and stems and put in a large saucepan; crush with a masher or drinking glass.
Add the water and bring quickly to a boil.
Remove from heat; cover and let stand for 10 minutes. Strain and measure 1 2/3 cups into large saucepan.
Add lemon juice and a few drops of food coloring.
Stir in sugar; put over high heat and bring to boil, stirring constantly.
At once, stir in pectin, then bring to a full rolling boil and boil hard for 1 minute, stirring constantly.
Remove from heat; skim off foam with metal spoon and pour in hot sterilized jars.
Seal.
Makes about four 1/2 pint jars.
