Barbecued Pork - cooking recipe

Ingredients
    2 to 3 lb. boned pork loin
    3 c. sugar
    1/3 c. salt
    pinch of Chinese allspice powder
    pinch of garlic powder
    1 Tbsp. hoisin sauce
    1 Tbsp. sherry
    1/2 c. boiling water
    1 or 2 drops red food coloring (optional)
Preparation
    Cut boned pork loin in half lengthwise.
    (If tenderloin is thick,
    cut it in half and remove membrane.) Mix remaining ingredients, except oil, in a large bowl, stirring until sugar and salt
    are\tnearly dissolved.
    Add pork pieces stirring to coat well.
    Marinate
    1\thour or more.
    Then add 1 tablespoon oil
    (to give
    pork a shiny glaze.) Marinate at least 3 hours longer or overnight, turning pork occasionally.
    Place pork on a
    rack
    with roasting pan underneath to catch drips.
    (Add a small
    amount
    of water in bottom of the pan for prevent burning.)
    Bake
    at 425\u00b0 for about 20 minutes.
    Reduce the heat to 325\u00b0
    and
    continue roasting
    30
    to
    35 minutes turning pork occasionally.
