Creamy Onion Soup - cooking recipe
Ingredients

1 large sweet onion
2 Tbsp. butter
2 c. diced potatoes
1 large carrot, chopped
3 c. chicken broth
3 oz. cream cheese, cubed
1 c. milk
1/2 c. Cheddar cheese, shredded
salt and white pepper to taste
croutons or toast rounds
Preparation

Coarsely chop onion and saute in butter in a medium stock pot. Add potatoes and carrot and saute 2 to 3 minutes before adding broth to the pot.
Cover and simmer 20 minutes.
Add cream cheese, stirring to blend.
Cool slightly and puree, in batches, in a blender.
Return puree to the pot.
Add milk and Cheddar cheese and heat on low until well blended.
Season with salt and white pepper to taste.
Serve warm, topped with croutons or toast rounds. Serves 4.
