Escalloped Eggplant - cooking recipe

Ingredients
    1 large eggplant, cubed
    1 medium onion, chopped
    1 tsp. salt
    1 1/2 c. cracker or bread crumbs
    3/4 c. whole milk
    1 Tbsp. margarine, melted
    1 egg, beaten
    1 c. Cheddar cheese, diced
Preparation
    Boil eggplant, onion and salt until tender. Drain and add 1 cup crumbs, milk, margarine and egg. Mix lightly, but thoroughly. Add finely diced cheese.
    Pour into a buttered casserole dish and top with the remaining 1/2 cup crumbs which have been buttered. Bake in a 350\u00b0 oven for 30 minutes or until lightly browned and heated through.
