Russian Ground Chicken Cutlets - cooking recipe

Ingredients
    2 chicken breasts, skinned and boned
    4 slices white bread, soaked in milk
    1/2 lb. soft butter
    1 tsp. salt
    1/4 tsp. pepper
    2 c. bread crumbs
    1/3 lb. butter for frying
Preparation
    Grind the chicken through a meat grinder or chop very fine. Combine with softened bread (squeezed dry), butter, salt and pepper and beat until smooth.
    Shape into oval patties and roll in bread crumbs.
    Fry 5 minutes on each side.
