Scalloped Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1 c. onion, chopped
    2 tsp. salt
    1 1/2 c. soda crackers, crumbled
    dash of pepper
    6 Tbsp. butter or margarine
Preparation
    Pare eggplant.
    Cut in 1-inch cubes and boil in pan with onion and salt until tender, but not mushy, about 5 minutes.
    Drain.
