Low-Fat Curried Rice Salad - cooking recipe

Ingredients
    1 c. long-grain rice
    1/2 c. celery, chopped
    1/4 c. green onions
    1/4 c. sweet red pepper
    2 Tbsp. slivered almonds
    1/4 c. oil-free Italian dressing
    2 tsp. vinegar
    1 tsp. curry powder
Preparation
    Cook rice.
    Finely chop green onions and sweet red pepper. Combine first 5 ingredients in a medium bowl.
    Combine Italian dressing with vinegar and curry powder.
    Add to rice mixture and toss well.
    Cover and chill.
    About 95 calories per 1/2-cup serving.
