New Orleans Style Bean Soup - cooking recipe

Ingredients
    2 c. bean mix
    1 lb. kielbasa or ham hock
    1 large can stew tomatoes
    1 onion
    1 garlic clove
    chopped carrots and celery, etc.
    salt and pepper to taste
Preparation
    Wash beans and soak overnight.
    Drain and add 2 quarts of water.
    Cook covered 2 1/2 hours.
    Add meat, garlic, tomatoes, carrots, celery, etc.
    Salt and pepper to taste.
    Simmer at least 30 minutes or more; adding water as needed.
