Chicken Stew(Serves 6) - cooking recipe

Ingredients
    2 lb. boneless chicken breasts, cut into 2-inch cubes
    3/4 tsp. salt
    1/2 tsp. pepper
    2 Tbsp. vegetable oil
    1/2 c. chopped onion
    1/2 c. chopped bell pepper
    1 to 2 garlic cloves, minced
    2 tsp. curry powder
    1 (28 oz.) can tomatoes, broken up with their juice
    2 Tbsp. parsley
    1/4 c. raisins (optional)
Preparation
    Season chicken with salt and pepper.
    In a frying pan, heat oil over medium heat.
    Add chicken and cook, stirring, until opaque outside, about 10 minutes.
    Remove chicken from pan with a slotted spoon.
    Add onion, bell pepper, garlic and curry powder to pan.
    Cook, stirring, until onion and pepper are tender, about 3 minutes.
    Return chicken to pan.
    Add remaining ingredients and simmer, partly covered, 45 minutes.
    Serve over rice or couscous.
