Mexican Lentils And Rice - cooking recipe

Ingredients
    2 tsp. olive oil
    1 c. diced carrots
    1 c. diced sweet red peppers
    1/4 c. finely chopped onions
    1/2 c. rice
    1/2 c. lentils
    2 c. defatted chicken stock
    1/2 tsp. chili powder
    1/2 tsp. ground cumin
    1 c. peas
Preparation
    In a 2-quart saucepan over medium-high heat, warm the oil for 30 seconds.
    Add the carrots, peppers and onions; saute for 2 minutes.
    Add the rice and lentils; saute for 2 minutes.
