Cheese Potatoes - cooking recipe

5 to 6 medium potatoes
2 c. shredded Cheddar cheese
1/4 c. butter
1 1/2 c. sour cream
1/3 c. chopped green onions
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. butter
Preparation

Boil the potatoes in the skins.
Cool, peel and then shred coarsely.
Mix in a saucepan over low heat the cheese and 1/4 cup butter, stirring until almost melted.
Remove from heat; blend in sour cream, onions, salt and pepper.
Fold in the potatoes.
Pour into a greased 2-quart casserole dish.
Dot the top with the leftover butter, then bake, uncovered, at 325\u00b0 to 350\u00b0 for 30 minutes.
