Salmon Cakes - cooking recipe

Ingredients
    1 (about 15 oz.) can pink salmon, drained and flaked
    2 c. fresh bread crumbs
    1/3 c. chopped scallions
    1 large egg
    1/4 tsp. each salt and pepper
    2 Tbsp. vegetable oil
Preparation
    Thoroughly mix all ingredients except oil.
    With water moistened hands, shape in 8 patties, using 1/4 cup mixture for each.
    Heat oil in large skillet over medium heat.
    Add patties and cook about 3 minutes per side, until golden brown.
    Makes 4 servings.
