Ingredients

5 medium red-skinned apples
1 c. sugar
1/2 c. cider vinegar
2 1/2 c. water
2 (3-inch) cinnamon sticks
1 tsp. whole cloves
1 tsp. whole allspice
1/2 tsp. red food color
Preparation

Wash and core apples, but do not pare.
Cut crosswise into 1/2-inch slices.
Combine sugar and remaining ingredients in large skillet; simmer 5 minutes.
Place apples in syrup; cook for 5 minutes, turning carefully.
Transfer rings to shallow bowl. Strain syrup over apples.
Refrigerate, covered, overnight.
Serve chilled as a meat garnish.
Makes about 24 rings.
