Cashew Topping - cooking recipe

Ingredients
    1 c. cashews
    1 1/2 Tbsp. arrowroot or cornstarch
    2 c. hot water
    1 tsp. vanilla
    1/8 tsp. salt
Preparation
    Blend cashews and arrowroot with hot water, then put in a saucepan and add vanilla and salt.
    Cook until thick, stirring constantly.
    Cool and use as a topping for pie, etc.
    Fold in blended or finely chopped dried fruit such as apricots, apples, dates, etc. to make topping for waffles or French toast.
    May be used like whipped cream.
