Home Fried Yams - cooking recipe

Ingredients
    4 medium yams, peeled
    1/2 tsp. salt
    4 Tbsp. butter or margarine
    2 Tbsp. sugar (optional)
Preparation
    Slice yams 1-inch thick.
    Combine water and salt; soak yam slices for 20 minutes.
    Remove from water; pat dry.
    Melt butter in large frypan until bubbly.
    Add yams; brown both sides.
    Sprinkle with sugar.
    Cover with lid; reduce heat to low; simmer for 15 to 20 minutes or until tender.
