R.U. Peking? Chicken - cooking recipe

Ingredients
    4 lb. chicken wings or drumsticks
    1/2 c. soy sauce (preferably Chinese)
    1/4 c. sherry or Madeira
    1/3 c. hoisin sauce
    1/4 c. cider vinegar
    1/2 c. honey
    1/4 c. orange marmalade
    6 scallions, minced
    2 cloves garlic, minced
    2 Tbsp. green pepper, minced
    1 tsp. grated lemon rind
    1 tsp. grated orange rind
    4 drops Tabasco
Preparation
    Combine all ingredients (except chicken) in a saucepan; bring to a boil and simmer 5 minutes.
    If using wings, cut
    off and discard tips and separate wings at joints.
    If using drumsticks, cut or snip at bottom and push meat up to form a \"drumette\" with handle (if desired).
    Place chicken in a glass or ceramic bowl; pour seasoning mixture over chicken and mix well to coat. Marinate overnight in the refrigerator.
    Drain and save marinade.
