Salad Bar Minestrone - cooking recipe

Ingredients
    1 1/4 lb. mixed salad bar vegetables (7 c.)
    1/2 lb. sweet Italian sausage
    1 clove garlic, chopped
    2 Tbsp. olive oil
    1 (8 oz.) can tomato sauce
    1 (10 3/4 oz.) can condensed beef broth
    3 soup cans water
    1 (19 oz.) can undrained white kidney (cannellini) beans
    1/2 tsp. oregano
    1/2 tsp. salt
    1/4 tsp. pepper
    1/3 c. orzo or other small pasta
Preparation
    Slice any large vegetable into bite size pieces.
    Saute sausage and garlic in oil in a large pot until meat is no longer pink.
    Drain most of oil.
    Add vegetables.
    Saute 2 to 5 minutes until vegetables begin to brown.
    Stir in tomato sauce, broth, water, beans and seasonings.
    Simmer, uncovered, 15 minutes. Sprinkle pasta over soup; simmer 15 minutes or until pasta is tender.
