Arugula Salad - cooking recipe

Ingredients
    1 1/2 large bunches arugula
    1 large tomato, cored
    1/4 red onion, thinly sliced
    2 Tbsp. lemon juice
    3 Tbsp. balsamic vinegar
    5 Tbsp. olive oil
    1/8 tsp. salt
    1/4 tsp. ground white pepper
Preparation
    Remove and discard arugula stems and cut leaves crosswise into 1/2-inch pieces.
    Transfer to bowl.
    Cut tomato into 1/2-inch dice; add to arugula.
    Add onion to bowl.
    Whisk remaining ingredients. Add seasoning.
    Toss salad with dressing.
    Transfer veal chops to warm dinner plate and top with arugula salad (approximately 1 cup).
