Baked Vegetable Casserole - cooking recipe
Ingredients

1 small eggplant, cut into 3/4-inch cubes
12 oz. yellow squash, sliced 1/4-inch thick
12 oz. zucchini, cut in 1/2-inch chunks
1 c. thinly sliced onion
2 tomatoes, cut in 1/2-inch chunks
1 green pepper, cut in strips
2 Tbsp. vegetable oil
2 garlic cloves, minced
2 tsp. basil
1 tsp. salt
Preparation

Mix all ingredients.
Place in large, shallow casserole.
Bake at 375\u00b0 for 30 minutes.
Stir well.
