Ingredients

2/3 c. shortening (I use Crisco)
4 eggs, separated
3 c. pastry flour
3 tsp. baking powder
1 tsp. salt
1 c. milk
1 tsp. vanilla extract
1 c. shredded coconut
Preparation

Beat eggs and shortening together until smooth and creamy. Beat egg yolks until foamy.
Stir into mixture; beat until very light.
Add dry ingredients and milk to creamed mixture.
Beat egg whites until stiff.
Carefully fold into batter.
Pour batter into 3 greased and floured pans.
Bake at 350\u00b0 for 15 to 20 minutes. Cool and ice with your favorite white icing.
Sprinkle coconut over cake.
