Carrot Muffins - cooking recipe
Ingredients

2 eggs
1/2 c. melted margarine
1 c. sugar
1 1/2 c. flour
1 1/2 c. grated carrots (approximately 2 to 3)
1 tsp. baking soda
1 tsp. cinnamon
3/4 tsp. salt
1/2 c. chopped nuts (optional)
Preparation

Beat eggs; add sugar and beat until well blended.
Add melted margarine and beat well again.
Combine dry ingredients and add to mixture.
Fold in carrots and nuts.
