Easy Red Beans And Rice - cooking recipe

Ingredients
    1 lb. smoked link sausage, cut into 1/2-inch slices
    1 medium onion
    1 medium green pepper
    1 clove minced garlic or equivalent in dry or wet
    2 (15 oz.) cans kidney beans, drained
    1 (16 oz.) can chopped tomatoes, undrained
    1/2 tsp. dried whole oregano
    1/2 tsp. pepper
    hot, cooked rice
Preparation
    Cook sliced sausage over low heat 5 to 8 minutes.
    Add onion, pepper and garlic.
    Saute to tender.
    Drain, if necessary.
    Add beans, tomatoes and seasonings.
    Simmer, uncovered, 20 minutes. Serve over hot rice.
    Makes 4 to 6 servings.
