Potato Pancakes - cooking recipe

Ingredients
    2 lb. potatoes, peeled
    2 eggs, beaten
    1/4 c. grated onion
    2 Tbsp. flour
    3/4 tsp. salt
    dash each: nutmeg and pepper
    oil (for frying)
Preparation
    Grate potatoes coarsely in a large bowl of ice water.
    Let stand 15 minutes.
    Mix beaten eggs, onion, flour and seasonings in a large bowl.
    Drain potatoes and pat dry.
    Stir 4 cups potatoes into egg mixture.
    Pour by 1/4 cup into 1/8-inch deep hot oil. Fry for 2 to 3 minutes.
