Salmon Souffle Ala Pittaluga - cooking recipe

Ingredients
    2 Tbsp. butter
    2 Tbsp. flour
    1/2 tsp. salt
    1/2 tsp. celery salt
    1/2 tsp. paprika
    1/2 c. milk
    3 egg yolks, well beaten
    1 c. (8 oz.) cooked or canned salmon, flaked
    3 egg whites, stiffly beaten
Preparation
    Melt butter, stir in flour and seasonings.
    When well blended, slowly add milk, stirring constantly over low heat until mixture thickens and boils.
    Remove from heat and stir in well-beaten egg yolks.
    Fold in salmon; cool.
    Fold in stiffly beaten egg whites. Pour into greased 1 1/2-quart baking dish.
    Bake at 425\u00b0
    for 20 to 25 minutes.
    Yields 6 servings.
