Apple Juice Dressing(Low-Fat) - cooking recipe

Ingredients
    1/4 c. apple juice
    2 1/2 Tbsp. apple cider vinegar
    2 Tbsp. minced sweet onion or 1 large shallot, minced
    2 tsp. Dijon mustard
    1 tsp. dried tarragon
    3 Tbsp. coarsely chopped fresh parsley
    generous amount of freshly cracked black pepper
Preparation
    Combine all ingredients.
    Blend or process until smooth. Cover and refrigerate several hours.
