Potato Puffs - cooking recipe

Ingredients
    2 eggs, separated
    2 c. leftover mashed potatoes
    2 Tbsp. grated Parmesan cheese
    1 Tbsp. minced fresh parsley or chives
    1 tsp. dried minced onion
    1/8 tsp. garlic powder
    2 or 3 Tbsp. margarine, melted
Preparation
    In mixing bowl, beat egg yolk.
    Add potatoes, cheese, parsley, onion and garlic powder; mix well.
    Beat egg whites until stiff; fold into the potato mixture.
    Brush eight baking cups with melted margarine.
    Spoon potato mixture into cups.
    Brush remaining margarine over potatoes.
    Bake at 375\u00b0 for 30 to 35 minutes until lightly brown.
