Merry Cheese Cakes - cooking recipe

Ingredients
    2 (8 oz.) pkg. cream cheese (at room temperature)
    3/4 c. sugar
    2 eggs
    1 Tbsp. lemon juice
    1 tsp. vanilla
    20 vanilla wafer cookies
    1 can cherry pie filling
Preparation
    Preheat oven to 375\u00b0.
    Beat cream cheese until smooth.
    Add sugar and mix thoroughly.
    Add eggs, one at a time, beating until well blended.
    Stir in lemon juice and vanilla.
    Line muffin pans with paper baking cups, then place one wafer cookie in each cup. Fill cups approximately 2/3 full.
    Bake 15 to 20 minutes or until set.
    Top with pie filling.
    Chill until serving time.
    Makes 20 cheese cakes.
