Roasted Garlic Mashed Potatoes - cooking recipe

Ingredients
    4 heads garlic
    4 lb. baking potatoes, peeled and sliced
    1 1/2 t. salt
    1 T. olive oil
    1/2 c. butter
    1 c. milk
    1/2 t. pepper
Preparation
    Place garlic on a square of aluminum foil; drizzle with oil, and wrap in foil.
    Bake at 425 degrees for 30 min.
    remove from oven, and set aside.
    Cook potatoes in boiling water to cover 15-20 mins. or until tender;
    drain and transfer to a large mixing bowl.
    Add butter and remaining ingredients;
    beat at med. speed until fluffy.
    Cut off pointed ends of garlic;
    squeeze pulp from garlic cloves, and stir into mashed potato mixture.
    Serves 8.
