Christmas Casserole Cookies - cooking recipe

Ingredients
    2 eggs, well beaten
    1 c. sugar
    1 c. flaked coconut
    1 tsp. vanilla
    1 c. snipped dates
    1 c. chopped nuts
    1/4 tsp. almond extract
Preparation
    Add the sugar to the beaten eggs. Beat until fluffy. Stir in the coconut, vanilla, dates, nuts and almond extract.
    Pour into ungreased 2-quart casserole. Bake at 350\u00b0 for 30 minutes. Remove from oven and stir well with wooden spoon.
    Cool.
    Roll into balls and cover with granulated sugar.
    Makes 3 1/2 dozen.
