Nassau Grits - cooking recipe

Ingredients
    1 lb. bacon, chopped
    3 large onions, chopped
    2 bell peppers, chopped fine
    2 (No. 303) cans tomatoes
    1 1/2 c. ham, finely chopped
    1 1/2 c. grits
    7 1/2 c. water
Preparation
    Fry bacon and remove from grease.
    Use 1/4 cup of grease to saute onions and peppers.
    Add tomatoes and ham.
    Simmer one hour. Simmer grits and water one hour.
    Combine the two and add bacon last.
    Good with fish.
    Serves 6 to 8.
