3 Tbsp. fat-free margarine
1 box Jiffy corn muffin mix
1 carton Egg Beaters
1 can cream-style corn
1 can whole kernel corn, do not drain
8 oz. fat-free sour cream
diced onion (optional)
Preparation

Melt margarine in a 2-quart glass dish in microwave.
In large bowl mix remaining ingredients (except onions).
Stir until mixed well; bake one hour at 350\u00b0, uncovered.
Add diced onions on top (optional).
