Eggplant Parmesan - cooking recipe

Ingredients
    1 large eggplant *
    1 1/2 small Mozzarella cheese, grated
    Parmesan cheese to your liking
    2 eggs
    pinch of salt and pepper
    canola oil to fry eggplant
    jar tomato sauce or fresh sauce
Preparation
    Cut up and peel eggplant night before.
    Salt and layer so water drains out.
