Ingredients

2 c. sugar
1 c. shortening
5 eggs
1 tsp. coconut extract
2 c. self-rising flour
13 oz. coconut
1 c. buttermilk
Preparation

Cream sugar and shortening and add eggs, one at a time.
Beat 2 minutes after each.
Add extract, buttermilk and flour.
Add coconut.
Stir well, then beat 2 1/2 minutes with mixer.
Bake 1 hour 350\u00b0.
