Ingredients

1 lb. beans (navy or Great Northern), wash and picked
1 c. onion, chopped
1/2 c. green onions, chopped
1 stalk celery, chopped
1 carrot, chopped
3/4 c. green bell pepper, chopped
3/4 c. red bell pepper, chopped
2 cloves garlic, minced
2 Tbsp. lemon juice
1 Tbsp. Worcestershire sauce
1 tsp. thyme
1/4 tsp. cayenne pepper
2 bay leaves
1/2 c. parsley, snipped
2 1/2 oz. black olives
Preparation

Place beans in large pot with 12 cups water.
Add all ingredients except parsley and olives.
Bring to a boil, then simmer for 3 hours.
Five minutes before beans are finished, add parsley, olives, salt and pepper to taste.
Can be served over cooked white rice.
