Charcoal-Grilled Chicken With Garlic - cooking recipe

1 chicken, cut for frying
2 garlic heads
1/2 bottle red wine
1 c. olive oil
dash of pepper
2 sprigs thyme (fresh)
Preparation

Cut the chicken into serving pieces; peel 10 cloves of the garlic and chop them roughly.
Marinate chicken in 1/2 bottle red wine with chopped garlic and 3 sprigs fresh thyme for 2 or 4 hours in the refrigerator.
Spread remaining cloves of garlic, with the skins on, in a small baking dish in one layer and cover with the cup of olive oil.
Sprinkle with salt and pepper and bake in a preheated 300\u00b0 oven for 1 1/2 hours or until garlic is completely soft.
Puree garlic through a food mill when it is done.
Discard the skins and reserve the puree.
