Chicken Rice Casserole - cooking recipe

Ingredients
    2 1/2 to 3 lb. fryer chicken parts
    5 Tbsp. butter
    4 Tbsp. olive oil
    2 Tbsp. sherry
    1 small onion, chopped
    1 green pepper, chopped
    1 clove garlic, chopped
    1 c. raw long grain rice
    1 1/2 c. chicken broth
    1 bay leaf
    1/2 tsp. salt
    1/4 tsp. pepper
    2 medium tomatoes, peeled and sliced
    2 Tbsp. Parmesan cheese
Preparation
    Wash chicken; pat dry.
    Heat 4 tablespoons butter and oil in large skillet over medium heat.
    Brown chicken well on all sides. Remove chicken from pan; add onion, green pepper and garlic to pan.
    Saute until golden brown.
    Add rice; cook 2 minutes.
    Add chicken broth, bay leaf, salt and pepper; bring to boil.
    Grease 2 quart casserole.
    Pour in rice mixture; top each chicken.
    Bake at 350\u00b0 for 45 minutes.
    Cook tomatoes in 1 tablespoon butter; place on chicken.
    Sprinkle cheese.
    Bake 15 minutes.
