Morning Glory Muffins - cooking recipe
Ingredients

1 medium carrot, shredded
1 large apple, shredded
1/2 c. vegetable oil
2 eggs
1/3 c. sugar
2 tsp. vanilla
1/2 c. coconut
1/3 c. raisins
1/3 c. chopped pecans
3/4 c. whole wheat flour
1/2 c. rolled oats
3 Tbsp. wheat germ
1 tsp. soda
3/4 tsp. cinnamon
1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ginger
Preparation

Process oil, eggs, sugar and vanilla in food processor, until well blended, about 30 seconds.
Add carrot, apple and remaining ingredients.
Pulse blender until combined.
Do not overprocess. Spoon batter into 12 cup muffin pan.
Bake in preheated 375\u00b0 oven about 20 minutes.
