Rainbow Shrimp Salad - cooking recipe

Ingredients
    1 c. cooked shrimp
    3 c. cooked rice
    1/4 c. celery
    1/4 c. chopped green pepper
    1/4 c. minced onion
    1/2 tsp. salt
    1/4 tsp. pepper
    3 Tbsp. mayonnaise or salad dressing (or to taste)
    crisp lettuce
    2 tomatoes, cut in wedges
    1 lemon, cut in wedges
    1/2 c. French dressing (optional)
Preparation
    Split each shrimp lengthwise.
    Combine shrimp, rice, celery, green pepper, onion, mayonnaise, salt and pepper; cover and chill. Before serving, spoon mixture onto lettuce; garnish with tomato wedges and, if desired, with whole shrimp.
    Serve with lemon wedges and French dressing (optional).
