Chicken Supreme With Apples And Cream - cooking recipe

Ingredients
    1 1/2 lb. chicken breasts, boneless and skinless
    2 Granny Smith apples
    2 Tbsp. shallots, chopped
    4 Tbsp. Calvados or apple brandy
    4 Tbsp. chicken broth
    1 c. heavy cream
    1 Tbsp. tarragon
    4 Tbsp. olive oil
    2 Tbsp. butter
Preparation
    Saute chicken breasts in oil, 4 minutes on each side on medium-high heat.
    Remove from pan.
    Add butter.
    Add shallots and peeled and sliced apples.
    Saute 3 minutes.
    Add Calvados and chicken broth.
    Reduce by half.
    Add heavy cream, tarragon and chicken.
    Cook on high until thickened.
