Lemony Chinese Chicken Morsels - cooking recipe
Ingredients

1/3 c. lemon juice
2 Tbsp. soy sauce
2 Tbsp. Dijon or spicy brown mustard
1 tsp. oil
1/8 tsp. cayenne pepper
2 chicken breasts (about 1 lb.), skinned, boned and cut in 1-inch cubes
Preparation

In a medium size bowl, combine lemon juice, soy sauce, mustard, oil and cayenne pepper.
Add chicken cubes and toss well to coat.
Cover and refrigerate at least 1 hour, tossing occasionally.
Heat broiler.
Lightly grease broiler pan rack. Drain chicken and place cubes on rack about 1 inch apart.
Broil 4 to 5 inches from heat for 7 minutes, brushing with the marinade and turning them halfway through cooking time.
Serve immediately.
