Lemon Curd - cooking recipe
Ingredients

6 eggs
2 c. sugar
juice of 4 lemons
1/2 c. butter or margarine
Preparation

Beat eggs; add sugar and then strained lemon juice.
Cook in double boiler or in microwave bowl in microwave oven.
Add butter, cut in small pieces, as soon as mixture is hot.
Cook until thick.
Cool and store in refrigerator.
Keeps for several months.
