Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dried small red beans (not kidney beans)
    1 large yellow onion, chopped
    5 cloves garlic, minced or equivalent dried
    2 Tbsp. dried parsley
    2 Tbsp. dried basil
    2 tsp. salt
    1 tsp. ground black pepper
    1/3 c. brown sugar (can use substitute)
    2 bay leaves
Preparation
    Rinse and sort beans.
    Put all ingredients in a large kettle and cover with water.
    Simmer 3 to 4 hours until beans are tender. Add water, if needed, while cooking.
    Serve over cooked rice, using pot liquids.
    Good with cornbread.
