Fat-Free Sweet Potato Corn Muffins - cooking recipe

1 1/4 c. whole wheat flour
1/2 c. plus 2 Tbsp. whole grain cornmeal
1 Tbsp. baking powder
1/2 c. cooked mashed sweet potato
3/4 c. orange or apple juice
1/4 c. plus 2 Tbsp. molasses
2 egg whites
1/3 c. raisins or chopped dates
Preparation

Combine flour, cornmeal and baking powder and stir to mix well.
Add the sweet potato, juice, molasses and egg whites.
Stir until moistened.
Fold in raisins or dates.
Coat muffin tins with nonstick cooking spray.
Bake at 350\u00b0 for 15 to 18 minutes.
