Opal'S Sweet Potato Fluff - cooking recipe
Ingredients

2 c. fresh cooked potatoes
2 sticks margarine, melted
1 c. granulated sugar
2 eggs
1 small can evaporated milk
juice from 1 orange
1/2 c. Angel Flake coconut
3/4 c. miniature marshmallows
Preparation

Mix with electric mixer.
Beat potatoes until color starts to look lighter; add margarine, eggs, sugar, milk and orange juice. Whip this mixture until it is fluffy.
Fold in coconut and marshmallows.
Pour into greased baking dish.
Sprinkle on topping and bake for 45 minutes in a 350\u00b0 oven.
