Ingredients

3 c. grated potatoes (raw)
2 eggs, well beaten
2 Tbsp. flour
1 tsp. sugar
1 tsp. salt
Preparation

Mix all ingredients together and beat well.
Drop mixture by heaping tablespoonful on well-greased hot griddle or pan and spread thinly.
Fry both sides until a golden brown.
Add more shortening as needed.
