Iranian Spinach - cooking recipe

Ingredients
    1/4 tsp. baking powder
    4 eggs
    1 large onion, diced
    1/8 c. vegetable oil
    2 Tbsp. flour
    1/4 tsp. salt
    1/4 tsp. pepper
    1 (No. 303) can spinach
Preparation
    Pour oil in skillet.
    Saute onion.
    Drain spinach (squeeze if necessary to get out liquid).
    Mix beaten eggs, salt, pepper, spinach and onion.
    Add flour to thicken.
    Pour into remaining oil in skillet.
    Spread evenly.
    Cook slowly one side, then turn to cook other side.
    Sprinkle with Parmesan cheese before serving.
