Ingredients

1 c. sugar
1 1/2 Tbsp. flour
1 1/2 c. buttermilk
1 1/2 tsp. lemon extract
1/4 tsp. salt
1 1/2 tsp. lemon juice
3 eggs, beaten
1 tsp. grated lemon rind
1 unbaked pie shell (8-inch)
Preparation

Combine sugar and flour.
Add buttermilk, lemon extract, salt, lemon juice and beaten eggs.
Mix well.
Pour into pie shell. Sprinkle top with grated lemon rind.
Bake at 425\u00b0 until inserted knife comes out clean.
