Fiesta Cheddar Bake(Yield: 8 Servings) - cooking recipe

Ingredients
    3 c. cooked rice
    1/2 c. 2% fat cottage cheese
    1/2 c. 2% skim milk
    1/2 c. bell peppers, chopped
    1 (2 oz.) jar pimentos, chopped
    1/2 tsp. salt
    1 c. Cheddar cheese, grated
    nonstick vegetable coating
    paprika (optional)
Preparation
    Combine in a large mixing bowl the rice, cottage cheese, milk, peppers, pimentos, salt and 1/2 cup of the Cheddar cheese.
    Stir ingredients thoroughly until well mixed.
