Hearty Farm Soup - cooking recipe
Ingredients

1/2 lb. dry navy beans
1/2 lb. dry pinto beans
1/2 lb. dry butter beans
1 large ham hock
1 lb. ground sausage
1 large apple, cubed
1 medium onion, chopped
2 stalks celery, chopped
2 Tbsp. brown sugar
2 Tbsp. mustard
2 cans tomatoes, cut (undrained)
garlic powder to taste
salt and pepper to taste
Preparation

Wash, sort and mix all three beans together.
Cover with water and soak 1 hour.
Drain; cover with water again.
Add ham hock and bring to boil.
Simmer for 1 1/2 hours or until beans are tender. In a skillet, brown sausage with apple, onion and celery.
Drain off fat.
Stir sausage mixture into beans.
Stir in brown sugar, mustard and tomatoes; add garlic powder, salt and pepper to taste. Cover and simmer 10 to 15 minutes.
Serves 10.
