Tomato Consomme - cooking recipe
Ingredients

1 14-oz. can chicken broth
2 c. tomato juice OR 1 11-1/2 oz. can V8
1/2 c. finely chopped onion
1 tsp. tomato paste
1/4 tsp. thyme
1/4 c. fresh basil, chopped
1/4 tsp. ground allspice
2 tsp. freshly squeezed lemon juice
Optional: plain yogurt OR sour cream
Parsley sprigs for garnish
Preparation

Combine broth, juice, onions, paste, thyme, basil and allspice in a large saucepan.
Simmer, uncovered, until onion is soft, 5-10 minutes.
Remove from heat and stir in lemon juice. Just before serving, top each bowl with a spoonful of yogurt or sour cream, and a sprig of parsley.
Serve hot.
